Climate:

Long autumns, cold winters, rainless temperate summers. Ideal for developing body and ripeness. Average summer temperature: 23º C and average winter temperature: 72º C. Minimum winter temperature: -4º C. Average annual rainfall: 220 mm.

Soil:
Alluvial, calcareous sand. Permeable, supported on gravel. 1.5% west-east and 1% south-north inclination.

The wine:
Bunches manually selected before destemming. Fermentation in stainless steel tanks at 32º - 33º C with one or two daily pumpings over during the first days. Fermentation continues 10 - 12 days longer. Racking is performed at a higher temperature in sedimentation tanks to remove larger solids. Malolactic fermentation is then achieved in part new, part used French and American oak barrels.

Maturing:
8 months in barrel.

Bottle ageing:
12 months.

Tasting notes:
Intense purple, big, alcoholic, full of aromas of black plums, berries, laurel and touches of chocolate. Spicy nose; plenty of tannin but avoiding harshness.
