Cabernet Sauvignon 65%, ,Merlot 30%, Cabernet Franc 5% The early part of the vegetative cycle was precocious and positive, with normal flower and fruit setting despite alternating hot and cold spells. Harvest began September 14th, and ended October 10th. The selection of the grapes was very severe. In the cellar, a second table was added, with 10 women who carefully removed every damaged grape to ensure perfectly healthy grapes. Each vineyard parcel hand harvested into 15kg crates. Grapes hand sorted, then destemmed and lightly crushed. Alcoholic fermentation part in wooden tanks of medium capacity and part in stainless steel at temperatures <30°C. Each variety and vineyard parcel vinified separately. Maceration for 25–30 days, after which the wine was moved into French oak barrels (70% new, 30% used once). Malolactic fermentation completed in barriques. Aged in barriques for 18 months at controlled temperature (each individual lot and variety aged separately). Master blend made after 12 months, than the wine was reintroduced in barriques for the remaining 6 months. The wine was then racked and gently fined prior to bottling. Further 12 month in the bottle before release. |
